What basic information do you need in order to customize and plan a menu for an event?
The event planning process begins with a meeting, preferably in person, though we can also meet over the phone if the client is not local. During this initial meeting, we definitely square away the basic details (date/time/guests/location), but the real intent is to get to know the client and understand how this event is an expression of them, what their key goals are, and how they have envisioned the party in their minds.
How far in advance should a customer contact your company in order to design a menu for their event?
This ultimately depends on the type of the event – though we are thankful to have a talented team that has pulled together amazing events in less than three weeks (including weddings!)
What type of events does your company typically cater to?
Our team has the pleasure of producing beautiful weddings, corporate functions, social gatherings and charitable galas. Miami is a busy event city! However, due to our large event capabilities, we have even played ghost caterer and ghost mixologist to celebrity chefs and high profile liquor brands who need a dependable team to reproduce their creations for events. During the event off-season (aka Hurricane Season), we activate another division of our company, which handles Disaster Relief Catering in areas where natural disasters hit. We were recently featured on ABC Channel 10 news during their Hurricane Preparedness Special for our work in this area.
Is there any sort of deposit or fee that must be paid before the event to reserve the catering services?
Yes, we do require a deposit for all events, due with contract. The deposit and payment schedule is different for corporate & charitable events versus weddings & social.
When is the full amount for the catering services due?
The full amount is due five business days before the event.
Does your company provide catering staff for the event?
Absolutely, we provide and train our own staff on an ongoing basis.
What is process of receiving the food on the day of the event? (pick up, delivery, etc.)
Our business focuses on personalized service, event day included. Therefore we do not focus on delivery and pick-up orders, solely full-scale events. This means the event requires the presence of our staff day-of to produce the party, and our culinary team to prepare and cook all food on-site the day of.
What is your most popular dish on your catering menu?
Our Ceviche is incredibly popular! Our Executive Chef is from Peru, and it is one of her standout dishes.
Working at events, you meet people from different industries. Are there menu preferences depending on the kind of industry? (informal, elegant, etc.)
Absolutely, but it is not limited to just the industry, it could also be the cultural backgrounds of the guests, the overall event style, even the time of year. While we focus on seasonal menus, ultimately the final event menu will depend on the goals and vision of the event.
What is an example of your ideal menu for an event?
Something that perfectly combines sight, smell, and taste…from the beverage to the entrée and dessert, it all flows.
